BBQ & Sausage Cookoff

No culinary style is as important to the heritage of the State of Texas than barbeque. Perhaps that's why the Lone Star State is home to the world's finest beef and sausage. In the late 1800's, the Chisholm Trail brought Texas a market for its abundance of cattle. Czech and German immigrants brought traditions of making sausage and smoking meat, adapting them to their new environs, and post-Civil War migration brought cooking styles of the deep south to add another flavor to the mix. Now, with more than 130 years of refinement, the result is an abundance of world-class barbecue deserving of the dedication, fanaticism and almost religious devotion given to it by citizens of the State.

The Fiddlers' Frolics embraces this hallowed heritage through The Texas State Championship Barbecue Cook-Off which takes place outside the KC Hall. Masters of the grill set up colorful and creative structures where they will compete for the best Sausage, Brisket, Beans, Steak, Chicken, Pork Ribs, Gumbo and Sauce. The top four places in each category will be awarded trophies and prizes. An overall barbeque champion will then be selected based on points awarded in each category. There will also be Showmanship Awards given away for the team with the 'Best Act' and for the team with the 'Best Pit Area'.
